Summer Fruit Torte

Peaches & Almonds

i can’t imagine this recipe would be any less delicious using apricots or plums– hell, try it with cherries or pears and let me know how it goes. completely basic cake is transformed by in-season fruit and a splash of both vanilla and almond extracts to make a very special breakfast or dessert that will make your mom say “it’s okay,” which is passive-aggressive for outstanding

8 servings, best eaten warm and with coffee

for the peaches

1 lb. peaches or other fruit, cut into wedges

*splash of bourbon or gran marnier

*juice of half a lemon

*sprinkle of sugar or honey

*= optional but not really

let the fruit macerate and get all juicy with the rest of the ingredients until you’re ready to assemble them atop your cake right before bake time

for the torte

1 cup flour

1/4 cup almonds, deeply toasted

1 tsp. baking powder

1/4 tsp. salt

1/2 cup butter or olive oil (or some combination of both

1/2 cup sugar

2 tsp. vanilla extract

1/4 tsp. almond extract

sprinkle of turbinado sugar and handful of sliced almonds for the top

a possibly unnecessary but game changing move is to use a food processor to pulse together the flour, almonds, baking powder, and salt to create a lovely nutty mixture of dry ingredients. if you don’t have a food processor, use chopped almonds instead and combine with the rest of the dry ingredients

in a medium bowl, beat together butter/oil and sugar until it’s light and fluffly. if you don’t have a mixer don’t worry, #justbeatit with a whisk until your forearm wears out

add in the eggs and extracts, then gently mix in the dry ingredients. the batter should be pretty thick and it won’t look like a lot. don’t worry, this is correct.

smooth batter into a spring-form pan . arrange peaches in a concentric pattern or however you want to make it look pretty. be sure to pour the juices on top, don’t waste that goodness! sprinkle with turbinado sugar and sliced almonds

bake at 350 degrees for 40-50 minutes— be sure to start checking at 40 minutes! you want a slightly browned top and puffed center, and if you stick a toothpick in you want just the faintest whisper of a crumb to stick to it.
